Ingredients:

– 8 ounces California cheddar cheese – 10 ounces (2-1/2 Cups) all-purpose flour – 2 tablespoons sugar – 1 teaspoon salt – 10 ounces (1-1/4 Cup) unsalted butter – 7 tablespoons cold water

Directions:

Finely shred cheese (about 2 cups); reserve.Mix flour, sugar and salt; work in butter until it resembles coarse cornmeal.Work in cheese.Add cold water 1 tablespoon at a time, stirring after each addition until dough can be formed into a cohesive ball.Shape the dough into a flat disk; chill.Roll dough about 1/8-inch thick.
