Arrange the bread in a single layer in a shallow dish, pour the milk on top, and set aside, turning once or twice, until softened, about 2 minutes.
Meanwhile, place the cheese on a microwave-safe dish and microwave on high until warm, about 20 seconds.
Squeeze the milk from the bread and arrange a slice on a serving plate. Top with the tomato, sprinkle with salt and pepper, and drizzle with the oil. Add the cheese, basil, and the remaining slice of bread.
Back in the day, when milk was a twice a day chore and more plentiful than flour, bread was a valued staple, and stale bread was as valuable and purposeful as fresh. It found life again as one of Nonna's dinner foods. The soft texture made for easy dining, too.
