Shaved Carrot Salad with Za’atar Yogurt Dressing

Ingredients:

– 1/4 cup Real California Milk Greek yogurt – 1 tablespoon za’atar seasoning, plus more for garnish – 1 lemon, juiced – 1 clove garlic, finely grated – Kosher salt and freshly ground black pepper, to taste – 5 medium multi-color carrots, peeled and finely shaved – 2 teaspoons chopped fresh thyme, for garnish :Za’atar, Whole Carrots, Carrot Ribbons

Directions:

Prep time: 10 minutes

Cook time: 0 minutes

In a large serving bowl, whisk yogurt, za’atar, lemon juice and garlic together until combined. Season with salt and pepper, to taste.

Add carrots and toss to coat. Season with additional salt and pepper, to taste. Garnish with thyme and serve.

Serves: 4 servings

Tip: Substitute orange carrots for multi-color carrots. To finely shave carrots, use a mandoline or vegetable peeler.
